Fruity buttermilk pancakes

Pancakes make a perfect brunch food for when you want a luxurious treat.  I found the original recipe for these from BBC Food here, but I will provide you with the recipe myself as, in true Real Life Food Blog style, I have made it my own!

Serves 2

What you’ll need:

  • 175 g self-raising flour
  • 1 tsp bicarbonate of soda
  • 1/2 tsp salt
  • 1 tbsp caster sugar
  • 100 ml buttermilk
  • 200 ml milk
  • 50 g melted butter
  • 1 banana
  • 4 tbsp soured cream
  • 1 tsp honey
  • 1 pear
  • Handful of strawberries
  • Handful of raspberries

Method:

  1. Mix the flour, bicarbonate of soda, salt and sugar together in a bowl
  2. Measure out the milk and buttermilk in a jug and add in the melted butter, stirring it in as you pour
  3. Using a whisk, slowly add the wet mixture to the dry ingredients to form a smooth paste
  4. Mash the banana in a bowl and then incorporate into the paste
  5. Heat up a small frying pan on a medium heat (grease with a little butter if you’re worried about the pancakes sticking) and add a ladle of mixture
  6. Heat the pancake until the top starts to have bubbles popping on the surface and the mixture becomes firm, then flip over using a spatula
  7. Brown the top then transfer to a warm plate and store in the oven at a low heat while you cook the remaining mixture
  8. Mix the honey into the soured cream until incorporated and spoon over the stack of pancakes you should now have on your plates
  9. Core and chop the pear and sprinkle over the top with the berries

 

Substitutions:

  • If fruit and soured cream isn’t your thing, try these with the maple-glazed bacon like the original recipe or just melt some butter on the top
  • Add any combination of fruit that you like, these were just what I had to hand at the time
  • If you don’t have buttermilk, make your own by adding 1 tbsp of white vinegar to 100 ml of milk and leaving to stand for 15 min
  • For something more classical, serve with sugar and lemon
  • For a chocolate treat, smear the pancakes with Nutella and add a scoop of vanilla ice cream – delicious!
