Chicken and chorizo pasta

This is another recipe given to me by my boyfriends mother.  We’ve enjoyed this several times when we’ve stayed with her on a weekend, so I got the recipe and gave it a try.  It was just as tasty as when she makes it, proving that the recipe is simple to follow.

Serves 5

What you’ll need:

  • 300 g cooked Penne pasta
  • 40 g chorizo, peeled and chopped
  • 1 small red onion, diced
  • 2 tbsp olive oil
  • 100 g mushrooms, sliced
  • 40 g sundried tomatoes, sliced
  • 300 g cooked chicken pieces
  • 100 g sweetcorn
  • 2 tbsp tomato puree
  • 100 ml water
  • 6 tbsp mascarpone cheese
  • Grated parmesan to serve

Method:

  1. Heat a large saucepan on a medium heat, add the olive oil and fry off the onion
  2. Add the chorizo, mushrooms and sundried tomatoes and cook for 5 min
  3. Add the cooked chicken pieces and sweetcorn and cook for a further 5 min
  4. Increase the heat and add the tomato paste, stirring thoroughly
  5. Pour in the water and allow to bubble before adding the mascarpone
  6. Add the cooked pasta and stir until coated in sauce and warmed through
  7. Serve with grated parmesan

Substitutions:

  • If you don’t have sundried tomatoes, cherry tomatoes are a good alternative
  • Pancetta or bacon can be used instead of the chorizo
  • This strong flavoured sauce is a good way of covering up vegetables if you have fussy eaters
