Chicken and peanut burgers with peanut and lime sauce

For those of you that have seen my post on turkey burgers, you may have seen that I suggested making chicken and peanut burgers.  The more I thought about this combination, the more it tempted me and so I finally put it together.  In my opinion, they will not disappoint!  The sauce is from a blog post by sweetpeas and saffron, and you can find the recipe here.

Serves 2

What you’ll need:

  • 2 chicken breasts, sliced
  • 1/2 red onion, diced
  • 3 tbsp roasted peanuts
  • 1 egg
  • 2 tbsp olive oil
  • 100 g peanut butter
  • 1 1/2 tbsp seasoned rice vinegar
  • 1/2 tbsp brown sugar
  • 1 tsp sesame oil
  • Juice of 1/2 lime
  • 2 brioche buns
  • 12 thin slices chorizo


  1. Put the chicken, onion, peanuts and egg into a food processor and blitz until smooth
  2. Heat two small frying pans and add half the oil to each on a medium heat
  3. Add half of the chicken mixture to each pan, shaping into a patty shape as best as possible
  4. Cook the chicken for about 15 min, ensuring that it is cooked and piping hot all the way through
  5. To make the sauce, mix together the peanut butter, rice vinegar, sesame oil, brown sugar and lime juice together.  If the peanut butter is stiff, melt it by gently microwaving for a few seconds
  6. Slice the brioche buns in half and toast until the grill, along with the chorizo, until golden
  7. Butter the buns with the sauce and stack the chicken burger and chorizo pieces.  Add an extra dollop of sauce if you prefer a stronger flavour
  8. Serve with sweet potato fries or salad


  • Chicken also goes well with cashew nuts, so I think this recipe using cashew nuts and cashew nut butter in the place of peanuts and peanut butter would work well.  Maybe add some honey to the sauce?
  • Bacon can be used instead of chorizo
  • If you don’t have time to put together the sauce, peanut butter on its own will still be delicious!
